Two pop-ups, a lot of lemons, and one gospel to share
Young entrepreneur Lyndsi Love shares Jesus and lemonade from her Mineola pop-up shop.

Lyndsi Love, a 2024 graduate of Grand Saline High School, is studying for her real estate licensewhile selling lemonade and other refreshments through her pop-up shop in Mineola.
“I used to be a barista, and I loved the communication, how people could bond over a drink,” Love said. “It was a great opportunity to share the gospel with people.”
That experience inspired her to combine her desire to share the gospel with her entrepreneurial spirit and launch Light of Day Refreshments. Her pop-up shop, which was set up in Mineola on June 5, marked only her second event.
“I spent weeks perfecting my lemonade, it’s not pulpy at all,” Love said. “My best friend owns her own business making bracelets, and she inspired me to do this.”
Love competed for Grand Saline in volleyball and track, and performed in theatre. She brings that same energy and enthusiasm to her small business. Her dream is to soon offer coffee drinks and to, one day, have a food truck to serve from. She said she loves to bake and would love to offer baked goods, such as her cookies, which she noted have been a hit at bake sales.
