January national apricot month
Are you an apricot fan? If so, join in the celebration during January of National Apricot Month. An especially good way to enjoy apricots is to eat dried apricots. They are an excellent source of vitamin A and a good source of fiber and potassium. Dried apricots should be stored in an airtight container at room temperature for up to three months, abiding by the expiration date on the pre-packaged varieties.
The following are some great ways to enjoy dried apricots. Pick one and give them a try.
- Add to rice – brown or white rice tossed with sautéed garlic, dried apricots and cranberries, raisins, slivered almonds and more.
- Use as a topping for ice cream – hold the sprinkles and add some chopped dried apricots to a scoop of your favorite ice cream.
- Apricots on a log – A little twist on the old-time favorite – spread peanut butter on celery and top with dried apricots.
- Add to salad – to add more potassium and vitamin A to your day, toss dried apricots on your favorite salad.
- Top your bagel – tired of boring bagels? Mash ripe bananas, spread over a bagel, and top with chopped dried apricots.
- Tantalizing trail mix – Make your own trail mix by combining dried apricots and other dried fruits with your favorite nuts (almonds, peanuts, pecans and walnuts, whatever your family likes).
- Fruit salad – Add chopped dried apricots to a mixture of your favorite fresh fruits for a simple treat any time of the day.
- Fruit dip – Mix in dried apricots to your favorite yogurt or other fruit dip and use with celery, crackers, bagels and English muffins.
- Serve with cheese – Cubed cheese, whole wheat crackers and dried apricot is a snack that appeals to both sweet tooth and salty cravings.
